Long Hiatus

Hello, baking fans!

I’m still talking to myself, I know…but I’m keeping track.

I have done a bit of baking here and there, but not a great deal of following the program as much.  I was away in Wisconsin for a couple weeks, and when I got back, it was organizing things to get ready for the school year and for the big camping event last weekend.

The next challenge was to build a structure using cookies.  I did that before with the shortbread house–I think it was a Weasley family structure…possibly one for Ron and Hermione after they got married.  My son ate most of it.

To mix it up, I figured I’d make three different types of shortbread.  I made standard, lemon, and chai spice.  I thought maybe I’d make a royal icing and glue them together into some kind of structure at camp, but I knew that I’d have to figure out a way to make it and store it outdoors…not an easy task.  So instead, I just bagged up the cookies and served them as is.

The lemon shortbread was a HUGE hit!  It was a basic shortbread recipe and mix in the zest of 1 lemon.  That’s it.

The chai spice cookies were made by adding ground cinnamon, nutmeg, cloves, allspice, pepper and ginger.  I was also going to add cardamom, but I couldn’t find it in the spice cupboard.  It may have fallen in the back somewhere.  I figured I could skip it and it would still taste great.  It DID!

The next challenge is for a yeasted tea loaf.  I have some ideas, which I will share in the next post.
