Holidays are always better with treats! Let’s start with a chocolate peppermint cake! Whatever’s left over will go to the school tomorrow.
I wanted to start with a really moist recipe, so I found this one here. The only thing I changed, of course, was to omit the coffee and add in double chai tea…but if you like coffee, knock yourself out. It seemed to take longer in my oven and I was concerned that the edges were going to get burnt and dry before it stopped being wobbly in the middle, but eventually it was cooked through, though it took longer than the 30 minutes indicated by the recipe.
For the frosting, I found a great, simple recipe:
1/3 c. butter–melt. Add 2/3 c. cocoa, stir. Remove from heat and allow to cool for a couple minutes. Then add 1/3 c. milk, 2 2/3 c. powdered sugar and 1 tsp vanilla. Whip. It says to use an electric mixer, but I just used a wire whisk. Super easy and DELICIOUS!
I decorated it with crushed peppermints–I unwrapped 16, smashed 13 and used 3 for the middle. SOOOO good!
