I don’t know if it’ll actually be bliss, but I’m going for a little alliteration here.
So I’m thinking about cranberry-white chocolate…maybe cranberry-orange and dipped or drizzled in white chocolate.
Cruising around on the web, I found this recipe on Epicurious. Pretty easy to mix up–dry stuff, wet stuff, mix the stuff, add the dried cranberries. Shape into two logs (each are just over 1 lb.) that are 1″ tall, 2 1/2″ wide and 9 1/2″ long, keeping them a few inches apart since they will spread.
Bake at 350 for 35 minutes. I’m struggling with my oven running about 20-25 degrees too cool, so I’m having to adjust and keep a close eye on things.
After the first bake, you slice it into 1″ wide strips (my loaves seemed a little underdone in the middle, but I figured this is going in for a second bake, so…it’ll be fine), then lay on their sides and bake another 10 minutes. Then flip them over and bake another 5 minutes.
Allow to cool. Drizzle with white chocolate.
Damn…these are good!
Crunchy…sweet…just a touch of cranberry. I’ve already eaten four of them.
